I’ve named my blog, “Chicken Recipes, Please?” because I’m always searching for great chicken recipes, and so, I’m asking everyone who reads this to share your favorites. Periodically, I will share some of my favorites with you. I’ve combed through thousands of chicken recipes, and I have developed a few of my own, but I’m always eager to find more.
Why do I like chicken so much?

Chicken is good for you (without the skin, of course, although there is nothing quite like the rich flavor of crispy roasted chicken skin).

Chicken is economical (at least, compared to a number of other meats).

Chicken is the source for so many stupid jokes.
Somebody once asked me, “Why do you need so many chicken recipes? For Pete’s sake, all you gotta do is put it in a pan and stick it in the oven till it’s done.” True, but for me, there doesn’t seem to be much difference between that and what early humans did when they sat on a rock in a damp cave and stuck the meat (probably not farm-raised chicken) on the end of a stick and held it over a fire. I would like to think we’ve made some progress since that time and that our tastes have evolved beyond being satisfied with the need to eat simply to keep ourselves alive. Alas, my quest for inventive, visually appealing, economical (as much as possible), and above all, delicious ways to incorporate chicken into my diet.
For the record, my name is Rick James, and I live in the beautiful rolling farmland of southern Minnesota. I like cooking (especially when using the grill), but I like eating even more. I tend to follow a healthy Mediterranean diet (fruits and vegetables, breads and grains, legumes, nuts, fish, yogurt and cheese, lots of olive oil, and of course, chicken) except when I’m putting away a half bag of M&Ms.

I just came across your blog and I have to say the first thing that came to mind was the girl from Girl, Interrupted who eats the chicken down to the bone and stores the carcasses under her bed. No bad thought intended, but it’s interesting to see someone so passionate about chicken. Maybe because I have a hard time getting excited about chicken. Prove me wrong?
